Thai Chicken Pad Krawpow (Thai Chicken Basil)

INGREDIENTS

  • 5 lb chicken breast, cut into small pieces or minced if you preferred

  • 2 tbsp cooking oil

  • 2-3 Thai chili peppers or more if you like extra spicy

  • 6 garlic cloves

  • 2 tsp sugar

  • 1 tsp Thai mushroom soy sauce

  • 1 tsp sweet dark soy sauce

  • 1 tsp oyster sauce

  • 1/4 tsp fish sauce

  • 2 tbsp water

  • 1 cup long beans or green beans, cut into small pieces

  • A handful of Thai Basil

For Serving

  • Steamed jasmine rice

  • Fried Egg

INSTRUCTIONS

  • In a mortar and pestle, pound garlic and Thai chili peppers into a rough paste. Set it aside.

  • Heat a pan or a wok on high heat and add cooking oil.

  • Then add the chili and garlic paste and stir for about 20 to 30 seconds.

  • Quickly add the chicken. Stir and toss the chicken until fully cooked.

  • Next, add sugar, mushroom soy sauce, oyster sauce, sweet dark soy sauce, fish sauce, and water. Toss and stir for 10 seconds.

  • Add long beans or green beans and stir for about 40 seconds.

  • Finally, add the fresh Thai basil. Stir and toss for about 20 to 30 seconds. Turn off the heat and serve with steamed jasmine rice.
