This is a simple and delicious stir fry rice noodles with prawns and bok choy recipe. It's a perfect comfort noodles dish. Super quick and easy to make for everyday lunch or dinner.

Stir Fry Rice Noodles With Prawns And Bok Choy

INGREDIENTS

  • 2 tbsp cooking oil

  • 1 tbsp minced garlic

  • 5 to 6 medium prawns

  • 2 oz (57g) dried rice noodle

  • 2 tbsp soy sauce

  • ΒΌ tsp dark soy sauce

  • 1 tbsp fish sauce

  • 1 Β½ tbsp sugar

  • 1 egg

  • 1 cup chopped bok choy

  • Β½ tsp white pepper

INSTRUCTIONS

  • In a medium warm bowl of water, soak dried rice noodles for 20 to 30 minutes.

  • Next, heat the wok in high heat.

  • Add cooking oil and minced garlic. Stir the minced garlic for about 30 seconds, then add the prawns. Cook the prawns for about 2 to 3 minutes.

  • Take out the rice noodles from the water and throw the rice noodles into the wok. Add soy sauce, dark soy sauce, fish sauce, and sugar. Toss and stir everything together for 30 seconds.

  • Move the noodles aside to create a space at the bottom of the wok. Then add a little bit of cooking oil and crack in 1 egg. Stir the eggs around for about 30 seconds to cook and break it up. Then stir and toss it with the rice noodles.

  • Finally, add chopped bok choy and white pepper. Toss and stir for about 1 minute. Transfer onto a plate and enjoy!
