Asian Chicken Noodles Salad

This is a healthy, and yummy Asian Chicken Noodles Salad recipe. Super fresh, light and quick to make for lunch or dinner. All you need are fresh herbs, cucumber, shredded chicken, rice noodles and dressing to make this delicious salad.
Asian Chicken Noodles Salad

INGREDIENTS
2 cup cooked rice noodles, drizzled with 1/2 tsp of sesame oil
1/2 cup cooked shredded chicken
1 cucumber, sliced or chopped
Mint leaves, chopped
Basil leaves, chopped
For Dressing
1 tbsp honey
1 tbsp sugar
1 tbsp hot water
2 tbsp fish sauce
2 tbsp white vinegar
2 tbsp lime juice
1 shallot, sliced
3 small red radishes, sliced
3 tbsp roasted peanuts, crushed
1 tsp sriracha sauce (optional)
Dash of black pepper
INSTRUCTIONS
Combine the dressing sauce ingredients in a small bowl. Mix the dressing well and set it aside.
Chop fresh mint leaves, basil leaves, and cucumber.
In a plate or bowl, add the rice noodles, shredded chicken, chopped mint, basil leaves, and cucumber.
Finally, pour some of the dressing and mix the noodles salad. Add more dressing to your taste.
