Cambodian Claypot Caramelized Pork Ribs

INGREDIENTS

  • .5 lb pork ribs, cut into bite-sized chucks

  • 1 tbsp cooking oil

  • 3 cloves garlic, chopped

  • 2 tbsp palm sugar

  • 2 to 3-star anise

  • 3 slices fresh ginger

  • 2 tbsp soy sauce

  • 2 tbsp dark soy sauce

  • 1 tsp ground black peppercorn

  • 2 boiled eggs

  • 1 cup water

  • Thai bird’s eye chili peppers

  • Fresh cilantro

For Serving

  • Steamed jasmine rice

INSTRUCTIONS

  • Heat the clay pot in medium heat. Add palm sugar and let the sugar dissolve.

  • Then add the pork ribs and cook for about 4 to 5 minutes.

  • Add 1 tbsp cooking oil, chopped garlic, sliced ginger, and star anise. Stir and cook for 30 seconds.

  • Next, add soy sauce, dark soy sauce, ground black peppercorn, and boiled eggs. Stir and mix with the pork ribs.

  • Pour 1 cup of water, stir, and close the clay pot lid. Bring to a boil, then turn to a lower heat. Let it simmer for 1 hour.

  • Finally, serve with steamed jasmine rice.
