Chicken Pad See Ew

INGREDIENTS

For Pad See Ew Sauce

  • 1 tbsp oyster sauce

  • 1 tbsp sweet soy sauce

  • 1 tbsp soy sauce

  • 1/2 tsp dark soy sauce

  • 2 tsp sugar

For Cooking

  • 4 tbsp cooking oil

  • 1 tbsp minced garlic

  • 1 thin sliced chicken breast, cut into bite-sized pieces

  • 4 oz dried regular rice noodles or flat rice noodles

  • 4 Chinese broccoli, sliced into a diagonal angle

  • 1 egg

  • 1/2 tsp white pepper

INSTRUCTIONS

  • Soak the rice noodles in a bowl of warm water for 20 to 30 minutes and drain out the water.

  • Prepare for the sauce, add oyster sauce, sweet soy sauce, soy sauce, dark soy sauce, and sugar in a small bowl. Mix the sauce well and set it aside.

  • Then heat the wok and 1 tbsp cooking oil. Add the chicken pieces and cook for 4 to 5 minutes. Take it out into a plate and set it aside.

  • The same wok, add 2 tbsp cooking oil and add minced garlic. Stir until the garlic turns into golden color, then add the Chinese broccoli. Stir and toss for about 1 to 2 minutes.

  • Next, add the rice noodles and the cooked chicken and quickly add the Pad See Ew sauce. Toss and stir for 30 seconds and let it rest, and cook for about 1 minute.

  • Stir and toss one more time, then move the noodles aside to make room for the egg. Add 1 tbsp cooking oil and crack one egg into the wok. Let it cook for 40 to 50 seconds, then scramble the egg.

  • Mix and toss everything together for 30 seconds.

  • Finally, add white pepper and transfer it to a plate.
