Spicy Minced Pork Stir-Fry

INGREDIENTS

  • .5 lb minced pork

  • 1 1/2 tbsp chopped garlic

  • 1 shallot, chopped

  • 10 fresh chopped Thai bird’s eye chili or or dried Thai chili (add more or less depending on your spice level)

  • 1 tbsp palm sugar

  • 1 tbsp soy sauce

  • 1 1/2 tbsp dark soy sauce

  • 2 tbsp cooking oil

INSTRUCTIONS

  • In a hot wok, add 2 tbsp cooking oil.

  • Then add chopped garlic and chopped shallot. Stir until light golden color.

  • Add minced pork, stir and cook for about 6 to 8 minutes.

  • Next, add chopped Thai bird’s eye chili and quickly add palm sugar, soy sauce, and dark soy sauce. Toss and stir for about 1 to 2 minutes.

  • Finally, turn off the heat and transfer the spicy minced pork to a bowl of white rice.
