Firecracker Salmon

INGREDIENTS
For Salmon
1 lb salmon
2 tbsp cooking oil
1/4 tsp kosher salt
1/4 tsp black pepper
For Firecracker Sauce
1 tbsp chopped garlic
2 tbsp soy sauce
2tbsp sambal oelek
2 tbsp sugar
For Garnish
Fresh cilantro, chopped
Green onion, chopped
For Serving
Steamed rice
Roasted broccolini
INSTRUCTIONS
Make the firecracker sauce. Combines chopped garlic, soy sauce, sambal oelek, and sugar in a small bowl. Mix the sauce well.
Season the salmon with salt and pepper.
On a high-heat medium pan, add cooking oil.
Add the salmon skin down first, and pan-seared until the skin is golden and crispy, then flip to cook the other side for about 2 minutes.
Take out the salmon from the pan. Set it aside.
In the same pan, add the firecracker sauce and simmer it for 1 minute.
Add back for the salmon into the pan and glaze it with the sauce.
Transfer onto a plate and garnish with chopped cilantro and green onion.
Serve with rice and broccolini or any vegetables that you like.
