Firecracker Salmon

INGREDIENTS

For Salmon

  • 1 lb salmon

  • 2 tbsp cooking oil

  • 1/4 tsp kosher salt

  • 1/4 tsp black pepper

For Firecracker Sauce

  • 1 tbsp chopped garlic

  • 2 tbsp soy sauce

  • 2tbsp sambal oelek

  • 2 tbsp sugar

For Garnish

  • Fresh cilantro, chopped

  • Green onion, chopped

For Serving

  • Steamed rice

  • Roasted broccolini

INSTRUCTIONS

  • Make the firecracker sauce. Combines chopped garlic, soy sauce, sambal oelek, and sugar in a small bowl. Mix the sauce well.

  • Season the salmon with salt and pepper.

  • On a high-heat medium pan, add cooking oil.

  • Add the salmon skin down first, and pan-seared until the skin is golden and crispy, then flip to cook the other side for about 2 minutes.

  • Take out the salmon from the pan. Set it aside.

  • In the same pan, add the firecracker sauce and simmer it for 1 minute.

  • Add back for the salmon into the pan and glaze it with the sauce.

  • Transfer onto a plate and garnish with chopped cilantro and green onion.

  • Serve with rice and broccolini or any vegetables that you like.
