Japchae (Stir-Fry Korean Sweet Potato Glass Noodles)

INGREDIENTS

For Ground Beef Marinate

  • 0.5 lb cup ground beef

  • 1 tbsp soy sauce

  • ⁣1/2 tsp dark soy sauce

  • ⁣1 tbsp sugar

  • ⁣1 tsp mirin

  • ⁣1 tsp sesame oil

  • ⁣2 cloves shredded garlic

For Cooking

  • Cooking oil

  • 2 beaten eggs, omelet & thinly sliced

  • ⁣1 onion, thinly sliced

  • ⁣1 red bell pepper, fine julienne

  • ⁣6 dried shiitake mushrooms, soaked & thinly sliced

  • ⁣1 carrot, fine julienne

  • ⁣3 cup fresh spinach

  • 8 to 10 oz of Korean sweet potato glass noodles

For Sauce

  • 4 tbsp soy sauce

  • 2 tbsp sugar

  • ⁣1 tbsp sesame oil

  • ⁣1/2 tsp black pepper

  • ⁣1 tbsp roasted sesame seeds

INSTRUCTIONS

  • In a small bowl, combine the ingredients for the ground beef. Mix everything well and set it aside.

  • Bring a medium pot of water to a boil and add some salt.⁣

  • Add fresh spinach to the boiling water and cook for 10-20 seconds. Then remove from the boiling water and rinse it off with cold water. Squeeze out the water from the spinach gently and set it aside.

  • ⁣Add the Korean potato glass noodles into the same pot boiling water and cook for about 5 minutes until the noodles are al dente. Then rinse with cold water and set the noodles aside.

  • In a medium-hot pan, add a little bit of olive oil, pour the beaten eggs, and spread to make an omelet. Remove from the pan and cut the omelet into thin slices. Set it aside.

  • In the same pan, add a little bit of cooking oil and onion with a pinch of salt. Sauté for 1 minute, then remove and set it aside. Repeat the same process and sauté the red bell pepper, carrot, and shiitake mushrooms.

  • Add cooking oil and the marinated ground beef into the hot pan and stir the meat for about 5 to 7 minutes to cook.

  • Meanwhile, combine ingredients for the sauce and set it aside.

  • ⁣Add the Korean potato glass noodles into the pan with the ground beef.

  • Then add the sautè veggies and omelet slices.

  • Finally, add the sauce. Stir fry and toss everything together for 3-5 minutes and sprinkle some sesame seeds.
