 Spicy Thai Pad See Ew

INGREDIENTS

  • 3 tbsp cooking oil

  • 2 eggs

  • 3-4 garlic cloves, minced

  • 3 Thai chili peppers

  • 10 oz dried flat rice noodles

  • 1/2 cup Chinese broccoli, chopped

  • 1 tsp oyster sauce

  • 1 tsp Thai mushroom soy sauce or regular light soy sauce

  • 1 tsp sweet dark soy sauce

  • 1/2 tsp black soy sauce

  • 2 tsp sugar

  • 1/4 tsp ground white pepper

INSTRUCTIONS

  • Bring the water to a boil, add dried flat rice noodles into the boiling water. Cook for 3-4 minutes and rinse it off with cold water. Set the noodles aside.

  • In a mortar and pestle, pound garlic and Thai chili peppers into a paste. Set it aside.

  • Heat a pan or a wok on a high heat and add cooking oil.

  • Add the chili and garlic paste and stir for about 20 to 30 seconds, then Chinese broccoli. Stir again for about 30 to 40 seconds.

  • Move everything to one side of the pan, then crack 2 eggs. Give it a little scramble and cook for 30 to 40 seconds.

  • Quickly add the flat rice noodles, oyster sauce, dark sweet soy sauce, soy sauce, black soy sauce, sugar and ground white pepper. Toss and stir everything together until 1 to 2 minutes.

  • Finally, transfer to a plate and add a dash of white pepper
