Spicy Thai Pad See Ew

INGREDIENTS
3 tbsp cooking oil
2 eggs
3-4 garlic cloves, minced
3 Thai chili peppers
10 oz dried flat rice noodles
1/2 cup Chinese broccoli, chopped
1 tsp oyster sauce
1 tsp Thai mushroom soy sauce or regular light soy sauce
1 tsp sweet dark soy sauce
1/2 tsp black soy sauce
2 tsp sugar
1/4 tsp ground white pepper
INSTRUCTIONS
Bring the water to a boil, add dried flat rice noodles into the boiling water. Cook for 3-4 minutes and rinse it off with cold water. Set the noodles aside.
In a mortar and pestle, pound garlic and Thai chili peppers into a paste. Set it aside.
Heat a pan or a wok on a high heat and add cooking oil.
Add the chili and garlic paste and stir for about 20 to 30 seconds, then Chinese broccoli. Stir again for about 30 to 40 seconds.
Move everything to one side of the pan, then crack 2 eggs. Give it a little scramble and cook for 30 to 40 seconds.
Quickly add the flat rice noodles, oyster sauce, dark sweet soy sauce, soy sauce, black soy sauce, sugar and ground white pepper. Toss and stir everything together until 1 to 2 minutes.
Finally, transfer to a plate and add a dash of white pepper
