Thai Pineapple Chicken Fried Rice

I love Thai Pineapple Chicken Fried Rice. The flavor of this dish is incredible. The best time to make fried rice is when you have leftover cooked rice. To make good fried rice is to refrigerate the rice for at least 1 to 2 days. Using cold rice is a technique to help the rice grains to firm up, making it easier to separate the rice and decreasing the chances of the fried rice turning out mushy.

Thai Pineapple Chicken Fried Rice

PREP TIME: 20 MIN COOK TIME: 10 MIN TOTAL TIME: 30 MIN

INGREDIENTS

  • 3 tbsp cooking oil

  • 1 pound chicken breast, cut into bite-sized pieces

  • 1 tbsp fresh minced garlic

  • 1 onion, finely chopped

  • 1 carrot, finely chopped

  • 1/4 cup peasβ €

  • 1 red bell pepper, finely chopped

  • 1/2 cup raw cashews

  • 1/4 tsp minced ginger

  • 2 cup jasmine rice, cold cooked rice

  • 2 tbsp light soy sauce

  • 1 tsp dark soy sauce

  • 1 tbsp sugar

  • 1 tbsp oyster sauce

  • 1 tbsp fish sauce

  • 1 tsp curry powder

  • 1/4 tsp salt

  • 1/4 tsp white pepper

  • 1 1/2 cup fresh pineapple

  • Green onion, chopped

  • Chives, chopped

INSTRUCTIONS

  • Add cooking oil into a hot wok, then add minced garlic and minced ginger. When the minced garlic and ginger turning to golden color, add the chicken pieces. Stir the chicken pieces for 3-4 minutes to cook.

  • Next, add onion, carrot, red bell pepper, peas, raw cashews, and minced ginger. Stir together for 2-3 minutes.

  • Add the cooked jasmine rice, soy sauce, dark soy sauce, oyster sauce, fish sauce, curry powder, salt, and white pepper. Toss everything together.

  • Then add pineapple pieces and chopped green onion. Stir and toss for 1 -2 minutes.

  • Finally, sprinkle some fresh chives.
