Bibim Guksu (Korean Spicy Cold Noodles)

INGREDIENTS
3.5 oz (100g) Somyeon (thin wheat noodles)
For Sauce
1.5 tbsp Gochujang (Korean chili paste)
1 tbsp sugar
1 tbsp soy sauce
1 tbsp Gochugaru (Korean chili powder)
1 cloves minced garlic
1 tbsp vinegar
1 tbsp sesame oil
2 tsp crushed toasted sesame seeds
For Garnish
Cucumber
Kimchi
Boiled egg
Crushed sesame seeds
INSTRUCTIONS
In a medium mixing bowl, combine all the sauce ingredients in a bowl. Mix the sauce well and set aside.
In a pot boiling water, add the Somyeon noodles and cook for 3 minutes. Drain and rinse the noodles with ice-cold water to remove excess starch. Drain well.
Next, transfer the noodles into the sauce mixing bowl and mix with sauce together until the noodles are well coated.
Finally, transfer the noodles to a bowl and garnish with fresh cucumber, kimchi, crushed toasted sesame seeds and boiled egg.
