Bibim Guksu (Korean Spicy Cold Noodles)

INGREDIENTS

  • 3.5 oz (100g) Somyeon (thin wheat noodles)

For Sauce

  • 1.5 tbsp Gochujang (Korean chili paste)

  • 1 tbsp sugar

  • 1 tbsp soy sauce

  • 1 tbsp Gochugaru (Korean chili powder)

  • 1 cloves minced garlic

  • 1 tbsp vinegar

  • 1 tbsp sesame oil

  • 2 tsp crushed toasted sesame seeds

For Garnish

  • Cucumber

  • Kimchi

  • Boiled egg

  • Crushed sesame seeds

INSTRUCTIONS

  • In a medium mixing bowl, combine all the sauce ingredients in a bowl. Mix the sauce well and set aside.

  • In a pot boiling water, add the Somyeon noodles and cook for 3 minutes. Drain and rinse the noodles with ice-cold water to remove excess starch. Drain well.

  • Next, transfer the noodles into the sauce mixing bowl and mix with sauce together until the noodles are well coated.

  • Finally, transfer the noodles to a bowl and garnish with fresh cucumber, kimchi, crushed toasted sesame seeds and boiled egg.
