Stir Fry Chicken Garlic Delight

INGREDIENTS
For Sauce
2 tbsp soy sauce
1 tbsp dark soy sauce
1 tbsp sugar
2 tbsp oyster sauce
1 tsp fish sauce
2 tbsp chicken broth
1 tsp Shaoxing wine
1/4 ground black pepper
For Fry Garlic
2 tbsp olive oil
3 tbsp minced garlic
For Cooking
1 tbsp olive oil
.80 lb chicken breast, cut into bite-sized pieces
2 tbsp minced garlic
1 shallot, chopped
1 onion, sliced
1 red bell pepper, chopped
1/4 cup carrot, sliced
1 cup green cabbage, chopped
1 cup green spinach
INSTRUCTIONS
Prepare the sauce in a small bowl. Mixed well and set aside.
In a hot wok, add 2 tbsp of olive oil and 2 tbsp of minced garlic. Fry the garlic until turned little golden color and pour the oil and the garlic into a small bowl. Set aside.
In the same hot wok, add 1 tbsp olive oil and the chicken pieces. Sear and toss the chicken pieces for about 4 to5 minutes until fully cooked.
Then add the fresh minced garlic and shallot. Stir for about 1 to 2 minutes.
Add onion, carrot, bell pepper, and green cabbage.
Pour the sauce and stir everything together for about 2 to 3 minutes.
Finally, the green spinach and a little bit of the fried garlic. Stir for 30 seconds.
Add the rest of the fried garlic and fresh cilantro to garnish.
Serve with rice.
